Marcy loved to keep things simple. Her favourite birthday cake was a stack of soft baked cookies sandwiched together with buttercream. Instead of taking a slice we took a layer each and ate it with gusto, licking our fingers afterwards with sugar-energised grins.
Birthday cake was a cheesecake from the shop down the high street, chocolate of course. On the top we placed chopped up candy bars and sparklers to light. Washed down with soda pop it was a true sugar rush.
The birthday cake was rainbows on rainbows. It was layered rainbow hued cakes in rainbow hued buttercream and rainbow sprinkles on top. What can I say? Mom believed in putting a hat on a hat.
My mother made a chocolate hedgehog cake every year on my birthday. The centre was rich and sweet, the coating was double cream mixed with melted chocolate. Into that went chocolate buttons to make the spines, and two white chocolate buttons for eyes. The nose was a malteser with that honeycomb centre. The birthday kid always got the nose, that was all part of the fun.
