The cupcakes were normal I guess. If you watch those cooking shows you'd think it took an hour of sweat and five saucepans to make one. Not so. Most cupcakes are a regular cake recipe such as Victoria sponge and then a regular buttercream or ganache on top. Maybe add some sprinkles if you're feeling fancy. When we cook that way we can all enjoy them as the sweet childhood treat they were always meant to be.
Momma made green cupcakes in honour of our monster fascination. It was a light green sponge with green buttercream and a spoon of gooseberry jam within.
The cupcake was proudly chocolate on chocolate. It was chocolate sponge with chocolate chunks and a chocolate ganache on top. And, because we believe in putting hats on hats when it comes to our birthday treats, there were curls of chocolate on top of that with a chocolate flake inserted into the ganache twirl. For fans of chocolate, that cupcake was the ultimate champion.
It was my favourite sort of cupcake, the super relaxed kind. Amelia would cook brownie mix in oversized cups and add ice-cream to the still hot cake. That warm brownie, that melting ice-cream, that was our Friday comfort food right there.
